Ingredients
- 1# of chopped boneless skinless chicken, cut into 1/2 inch cubes
- 2 tsp oil
- 2 cans of (14.5oz) chicken broth
- 4 cups water
- 4 cups of assorted veggies chopped: carrots, broccoli, red pepper, celery (whatever you favorite are)
- 2 envelopes of Italian salad dressing & recipe mix
- 2 cups Minute White Rice, uncooked
- 2 Tbsps parsley flakes
Directions
- Cook and stir chicken in hot oil in large saucepan until browned
- Add broth, water, veggies and salad dressing mix
- Bring to boil
- Reduce heat to low: cover
- Simmer 15 minutes or until veggies to how you like them
- Stir in rice and parsley; cover
- Remove from heat
- Let stand 5 minutes before serving
