Ingredients

  • 1# of chopped boneless skinless chicken, cut into 1/2 inch cubes
  • 2 tsp oil
  • 2 cans of (14.5oz) chicken broth
  • 4 cups water
  • 4 cups of assorted veggies chopped: carrots, broccoli, red pepper, celery  (whatever you favorite are)
  • 2 envelopes of Italian salad dressing & recipe mix
  • 2 cups Minute White Rice, uncooked
  • 2 Tbsps parsley flakes

Directions

  • Cook and stir chicken in hot oil in large saucepan until browned
  • Add broth, water, veggies and salad dressing mix
  • Bring to boil
  • Reduce heat to low: cover
  • Simmer 15 minutes or until veggies to how you like them
  • Stir in rice and parsley; cover
  • Remove from heat
  • Let stand 5 minutes before serving
